Ingredients:
- 2 medium zucchinis, grated
- 1 1/2 cups almond flour
- 1/2 cup shredded cheddar cheese (or any cheese of your choice)
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil or melted butter
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon baking powder
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with 8-10 muffin liners or grease the tin with cooking spray or butter.
- Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini into a clean kitchen towel or cheesecloth and squeeze out excess moisture to prevent the muffins from becoming too soggy.
- Make the Muffin Batter: In a large mixing bowl, combine the grated zucchini, almond flour, shredded cheddar cheese, Parmesan cheese, eggs, olive oil or melted butter, garlic powder, onion powder, baking powder, salt, and pepper. Stir everything together until well combined.
- Fill the Muffin Tin: Spoon the batter evenly into the muffin tin, filling each muffin cup about 3/4 full. Optionally, sprinkle a little extra cheese on top of each muffin before baking.
- Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the muffins to cool slightly in the tin before transferring them to a wire rack to cool completely. Garnish with fresh parsley, if desired, before serving.
