Ingredients
For the Venison Steaks:

- Salt and black pepper, to taste
- 2 tbsp olive oil or avocado oil
- 2 cloves garlic, minced
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme, chopped
For the Herb Butter:
- 4 tbsp unsalted butter, softened
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tsp lemon juice
- Salt and pepper, to taste
Instructions
- Prepare the Herb Butter: In a small bowl, combine softened butter, parsley, chives, lemon juice, salt, and pepper. Mix well and set aside.
- Season the Steaks: Pat the venison steaks dry with paper towels. Season both sides with salt and black pepper.
- Cook the Steaks: In a large skillet over medium-high heat, heat the olive oil. Add minced garlic, rosemary, and thyme, and cook for about 1 minute until fragrant. Add the venison steaks to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer for accuracy (130°F/54°C for medium-rare).
- Rest the Steaks: Remove the steaks from the skillet and let them rest for 5 minutes. This allows the juices to redistribute.
- Serve: Top each steak with a dollop of the prepared herb butter and allow it to melt over the warm meat. Serve with your choice of keto-friendly sides.
