- 2 cups beef broth (low-sodium)

- Salt and black pepper, to taste
- 1-2 jalapeños, diced (optional for heat)
- For Serving (optional):
- Shredded cheese (cheddar or Monterey Jack)
- Sour cream
- Fresh cilantro, chopped
- Slices of avocado

- Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes, until they are softened.
- Add the Garlic and Venison: Stir in the minced garlic and cook for another minute. Then, add the ground venison to the pot, breaking it apart with a spoon. Cook until browned and cooked through, about 6-8 minutes.
- Add Remaining Ingredients: Once the venison is browned, add the diced tomatoes, tomato paste, beef broth, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. If using, add the diced jalapeños for heat. Stir well to combine.
- Simmer: Bring the chili to a boil, then reduce the heat to low. Let it simmer uncovered for about 30-45 minutes, stirring occasionally, until it thickens to your desired consistency.
- Taste and Adjust Seasoning: Taste the chili and adjust the seasoning if necessary. If you prefer a spicier chili, you can add more chili powder or jalapeños at this stage.
- Serve: Ladle the chili into bowls and top with shredded cheese, sour cream, fresh cilantro, and avocado slices if desired. Enjoy your warm and hearty keto meal!
