Ingredients:

  • 4 large low-carb tortillas (e.g., almond flour or coconut flour tortillas)
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped bell pepper (any color)
  • 1/4 cup finely chopped cucumber (seeded)
  • 1/4 cup finely chopped spinach
  • 2 tablespoons diced red onion
  • 1 tablespoon fresh chopped parsley (or dill)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Filling: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, salt, and pepper. Mix until smooth. Fold in the chopped bell pepper, cucumber, spinach, red onion, and parsley, stirring until evenly combined.
  2. Assemble the Pinwheels: Lay one low-carb tortilla flat on a clean surface. Spread an even layer of the cream cheese and veggie mixture over the tortilla, leaving a small border around the edges.
  3. Roll and Chill: Roll the tortilla tightly into a log shape. Repeat with the remaining tortillas. Wrap each roll in plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
  4. Slice and Serve: Remove from the refrigerator and unwrap. Slice each roll into 1-inch pinwheels and arrange on a serving platter. Garnish with extra chopped parsley if desired.
