Instructions
- Cook the Steaks: Season the steaks on both sides with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook each steak for about 4-5 minutes per side, or until they reach your desired doneness (aim for 135°F for medium-rare). Remove steaks from the skillet and let them rest, loosely covered with foil.
- Prepare the Mushroom Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the sliced mushrooms and cook for about 4-5 minutes until softened and slightly browned. Add the minced garlic and cook for another minute until fragrant.
- Add Liquid Ingredients: Pour in the beef broth, scraping any browned bits from the bottom of the skillet. Stir in the heavy cream, Dijon mustard, and thyme. Let the sauce simmer for about 3-4 minutes until it thickens slightly, stirring occasionally. Season with salt and pepper to taste.
