Ingredients:
- 1 can (14.75 oz) salmon, drained and flaked (or 12 oz fresh cooked salmon)
- 2 large eggs
- 1/4 cup almond flour
- 1/4 cup finely chopped green onions
- 2 tablespoons mayonnaise (preferably sugar-free)
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
Optional Garnish:
- Lemon wedges
- Chopped parsley
Instructions:
- Prepare the Mixture:
In a large bowl, combine the flaked salmon, eggs, almond flour, green onions, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated. - Form the Patties:
Divide the mixture into 8 equal portions and shape each portion into a patty, about 2-3 inches in diameter. - Cook the Patties:
Heat olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the salmon patties. Cook for 3-4 minutes per side, or until golden brown and crisp on the outside. Avoid overcrowding the skillet; cook in batches if necessary. - Serve:
