Ingredients:

  • 1 can (14.75 oz) salmon, drained and flaked (or 12 oz fresh cooked salmon)
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup finely chopped green onions
  • 2 tablespoons mayonnaise (preferably sugar-free)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Optional Garnish:

  • Lemon wedges
  • Chopped parsley

Instructions:

  1. Prepare the Mixture:
    In a large bowl, combine the flaked salmon, eggs, almond flour, green onions, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. Form the Patties:
    Divide the mixture into 8 equal portions and shape each portion into a patty, about 2-3 inches in diameter.
  3. Cook the Patties:
    Heat olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the salmon patties. Cook for 3-4 minutes per side, or until golden brown and crisp on the outside. Avoid overcrowding the skillet; cook in batches if necessary.
  4. Serve:
    Serve the salmon patties warm with lemon wedges on the side. Garnish with chopped parsley if desired.
