Prep Time: 15 minutes
Cooking Time: 1 hour 15 minutes
Ingredients:
- 2 lbs rabbit, cut into pieces (you can use whole rabbit or rabbit legs)
- 3 tablespoons olive oil or butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken or vegetable broth (low-sodium)
- 1 cup mushrooms, sliced
- 2 medium zucchini, diced
- 1 cup carrots, sliced (optional for strict keto)
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Brown the Rabbit:
In a large pot or Dutch oven, heat the olive oil or butter over medium-high heat. Season the rabbit pieces with salt and pepper. Add the rabbit to the pot and brown on all sides, about 5-7 minutes. Remove the rabbit from the pot and set aside. - Sauté Aromatics:
In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant. - Build the Stew:
Return the rabbit to the pot. Add the chicken or vegetable broth, sliced mushrooms, diced zucchini, carrots (if using), thyme, rosemary, and bay leaf. Bring the mixture to a simmer. - Simmer:
Reduce the heat to low, cover, and let the stew simmer for 1 hour, or until the rabbit is tender and fully cooked. Stir occasionally, and add more broth if needed to maintain a stew-like consistency. - Finish and Serve:
Once the rabbit is tender, remove the bay leaf. Taste and adjust seasoning with more salt and pepper if needed. Serve hot, garnished with chopped fresh parsley.
