- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cups cremini mushrooms, sliced
- 1 small shallot, finely chopped
- 2 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 tsp dried thyme
- ½ tsp paprika
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the quails: Pat the quails dry with paper towels and season generously with salt, pepper, and paprika.
- Sear the quails: Heat olive oil in a large skillet over medium-high heat. Sear the quails on all sides for 8–10 minutes, until golden brown and cooked through. Remove the quails from the skillet and set aside.
