  • 4 large egg yolks
  • ¼ cup unsalted butter
  • 1 tsp lemon zest
  • ½ tsp xanthan gum (optional for thickness)

For the meringue:

  • 4 large egg whites
  • 1/4 tsp cream of tartar
  • 1/4 cup erythritol (or sweetener to taste)

Instructions:

1. Prepare the Crust:

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine almond flour, coconut flour, shredded coconut, erythritol, and salt.
  • Stir in melted butter and egg until the mixture is well combined and forms a dough.
  • Press the dough into the bottom and up the sides of a 9-inch pie pan.
  • Bake for 10-12 minutes until golden and set aside to cool.

2. Make the Lemon Curd:

  • In a medium saucepan, combine the lemon juice, erythritol, and egg yolks.
  • Cook over medium-low heat, whisking constantly until the mixture thickens (about 5-7 minutes).
  • Stir in the butter and lemon zest. If the curd isn’t thickening, you can mix in the optional xanthan gum to help.
  • Once thickened, remove from heat and let cool.

3. Prepare the Meringue:

  • In a clean, dry mixing bowl, beat the egg whites with cream of tartar until stiff peaks form (about 3-5 minutes).
  • Gradually add in erythritol and continue beating until glossy peaks form.

4. Assemble the Pie:

  • Spread the cooled lemon curd evenly over the crust.
  • Spoon the meringue on top of the lemon curd, spreading it to cover completely.
  • Bake for 15-20 minutes at 350°F (175°C) or until the meringue is golden brown.

5. Cool and Serve:

  • Allow the pie to cool completely before serving. Refrigerate for an hour for best results.
