Ingredients:

- 4 large egg yolks
- ¼ cup unsalted butter
- 1 tsp lemon zest
- ½ tsp xanthan gum (optional for thickness)
For the meringue:
- 4 large egg whites
- 1/4 tsp cream of tartar
- 1/4 cup erythritol (or sweetener to taste)
Instructions:
1. Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine almond flour, coconut flour, shredded coconut, erythritol, and salt.
- Stir in melted butter and egg until the mixture is well combined and forms a dough.
- Press the dough into the bottom and up the sides of a 9-inch pie pan.
- Bake for 10-12 minutes until golden and set aside to cool.
2. Make the Lemon Curd:
- In a medium saucepan, combine the lemon juice, erythritol, and egg yolks.
- Cook over medium-low heat, whisking constantly until the mixture thickens (about 5-7 minutes).
- Stir in the butter and lemon zest. If the curd isn’t thickening, you can mix in the optional xanthan gum to help.
- Once thickened, remove from heat and let cool.
3. Prepare the Meringue:
- In a clean, dry mixing bowl, beat the egg whites with cream of tartar until stiff peaks form (about 3-5 minutes).
- Gradually add in erythritol and continue beating until glossy peaks form.
4. Assemble the Pie:
- Spread the cooled lemon curd evenly over the crust.
- Spoon the meringue on top of the lemon curd, spreading it to cover completely.
- Bake for 15-20 minutes at 350°F (175°C) or until the meringue is golden brown.
5. Cool and Serve:
- Allow the pie to cool completely before serving. Refrigerate for an hour for best results.
