Servings: 4

Prep Time: 10 minutes (plus 30 minutes for marinating)

Cooking Time: 15 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice and zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Marinate the Chicken:
In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, oregano, salt, and pepper. Place the chicken breasts in a shallow dish or zip-top bag, and pour the marinade over them. Ensure that all pieces are evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
  2. Preheat the Grill:
Preheat your grill to medium-high heat (about 400°F/200°C). Lightly oil the grates to prevent sticking.
  3. Grill the Chicken:
Remove the chicken from the marinade and let the excess drip off. Place the chicken breasts on the preheated grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). The chicken should have nice grill marks and be cooked through without being dry.
  4. Serve:
Remove the chicken from the grill and let it rest for 5 minutes. Garnish with fresh lemon slices and additional chopped herbs if desired.
