Ingredients

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 3 tbsp unsalted butter
  • 3 garlic cloves, minced
  • Juice of 1 lemon (about 2 tbsp)
  • 1 lemon, sliced for garnish
  • 1 tsp lemon zest
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp paprika (optional, for color)
  • 1 tbsp fresh parsley, chopped for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Season Chicken: Pat chicken thighs dry with paper towels. Season both sides with salt, pepper, and paprika (if using).
  3. Sear the Chicken: In an oven-safe skillet over medium-high heat, melt 2 tablespoons of the butter. Place chicken thighs skin-side down and sear until golden brown, about 4-5 minutes per side. Remove chicken from skillet and set aside.
  4. Make the Sauce: In the same skillet, add remaining 1 tablespoon of butter. Sauté the minced garlic for 1 minute, then add lemon juice, lemon zest, thyme, and rosemary. Stir to combine, letting the sauce simmer for about 1-2 minutes.
  5. Bake: Return chicken to the skillet, spoon some sauce over each thigh, and place a lemon slice on top. Transfer skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and juices run clear.
  6. Serve: Remove from the oven, garnish with fresh parsley, and serve with any remaining sauce spooned over the top.
