Prep Time: 15 minutes
Cooking Time: 20 minutes
Ingredients:
For the Meatballs:
- 1 lb (450g) ground lamb
- 1/4 cup almond flour
- 1 large egg
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper, to taste
- 2 tablespoons olive oil (for cooking)
For the Tzatziki Sauce:
- 1 cup Greek yogurt (full-fat, unsweetened)
- 1/2 cucumber, grated and excess moisture squeezed out
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- Salt and pepper, to taste
Instructions:
- Prepare the Meatballs:
In a large bowl, combine ground lamb, almond flour, egg, chopped onion, minced garlic, parsley, oregano, cumin, cinnamon, salt, and pepper. Mix well until all ingredients are evenly combined. - Form the Meatballs:
Roll the mixture into small, even-sized meatballs (about 1 to 1.5 inches in diameter). This recipe should make around 16-20 meatballs. - Cook the Meatballs:
Heat olive oil in a large skillet over medium-high heat. Add the meatballs in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes per side, until browned and cooked through. Remove and set aside. - Make the Tzatziki Sauce:
In a bowl, combine the Greek yogurt, grated cucumber, lemon juice, minced garlic, and dill. Season with salt and pepper. Mix until well combined. - Serve:
Arrange the cooked meatballs on a serving platter with a side of Tzatziki sauce. Garnish with extra chopped parsley or a sprinkle of paprika, if desired.
