Ingredients:

  • 6 large eggs
  • 1 ripe avocado
  • 2 tablespoons mayonnaise (preferably avocado oil mayo)
  • 1 tablespoon lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 small tomato, finely diced (optional, for garnish)
  • Red pepper flakes (optional, for garnish)

Instructions:

  1. Boil the Eggs: Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat. Once the water is boiling, cover the pot, turn off the heat, and let the eggs sit for 12-14 minutes. After that, transfer the eggs to a bowl of ice water to cool. Once cool, peel the eggs and slice them in half lengthwise.
  2. Prepare the Guacamole Filling: Remove the yolks from the eggs and place them in a small bowl. In the same bowl, add the avocado, mayonnaise, lime juice, garlic powder, onion powder, salt, and pepper. Mash everything together until smooth and creamy.
  3. Fill the Eggs: Spoon or pipe the guacamole mixture back into the egg whites, dividing it evenly among the 12 egg halves.
  4. Garnish: Sprinkle the tops with diced tomato, chopped cilantro, and a pinch of red pepper flakes if desired for added color and flavor.
  5. Serve: Arrange the filled eggs on a platter and serve immediately, or refrigerate until ready to serve.
