Prep Time: 15 minutes

Cooking Time: 10 minutes

Ingredients:

For the Fish:

  • 1 lb white fish fillets (such as cod, tilapia, or snapper)
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 2 tablespoons coconut oil (or avocado oil) for frying

For the Tacos:

  • 8 large romaine or butter lettuce leaves (as taco shells)
  • 1/2 cup shredded red cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced

For the Sauce:

  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha or hot sauce (optional, for spice)
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Fish Coating:
In a shallow bowl, mix together the almond flour, grated Parmesan, smoked paprika, garlic powder, salt, and black pepper. In another shallow bowl, beat the egg.
  2. Coat the Fish:
Dip each fish fillet into the beaten egg, allowing any excess to drip off, then coat it in the almond flour and Parmesan mixture. Press gently to adhere the coating.
  3. Cook the Fish:
Heat the coconut oil in a large skillet over medium heat. Cook the fish fillets for about 3-4 minutes on each side, or until golden brown and fully cooked through. Remove from heat and let them rest for a minute before breaking them into large chunks.
  4. Make the Sauce:
In a small bowl, whisk together the mayonnaise, lime juice, and sriracha. Season with salt and pepper to taste.
  5. Assemble the Tacos:
Place a few pieces of the cooked fish into each lettuce leaf. Top with shredded red cabbage, diced tomatoes, avocado slices, and chopped cilantro. Drizzle with the prepared sauce.
  6. Serve:
Serve the lettuce-wrapped tacos immediately for a fresh, crunchy, and flavorful low-carb meal.
