Prep Time: 10 minutes

Cooking Time: 15 minutes

Ingredients:

  • 4 medium zucchini, spiralized into zoodles
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Additional Parmesan cheese for serving (optional)

Instructions:

  1. Cook the Chicken:
In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Sauté Garlic:
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
  3. Make the Alfredo Sauce:
Pour in the heavy cream and bring it to a simmer. Reduce the heat to low and whisk in the grated Parmesan cheese and Italian seasoning until smooth and creamy. Season with additional salt and pepper to taste.
  4. Combine Zoodles and Chicken:
Add the cooked chicken back to the skillet. Then, add the spiralized zucchini noodles and gently toss everything together, cooking for an additional 2-3 minutes until the zoodles are slightly tender but still al dente.
  5. Serve:
Remove from heat and garnish with fresh parsley and extra Parmesan cheese if desired. Serve immediately and enjoy!
