Servings: 4
Prep Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
- 4 medium zucchini, spiralized into zoodles
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Additional Parmesan cheese for serving (optional)
Instructions:
- Cook the Chicken:
In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside. - Sauté Garlic:
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it. - Make the Alfredo Sauce:
Pour in the heavy cream and bring it to a simmer. Reduce the heat to low and whisk in the grated Parmesan cheese and Italian seasoning until smooth and creamy. Season with additional salt and pepper to taste. - Combine Zoodles and Chicken:
Add the cooked chicken back to the skillet. Then, add the spiralized zucchini noodles and gently toss everything together, cooking for an additional 2-3 minutes until the zoodles are slightly tender but still al dente. - Serve:
Remove from heat and garnish with fresh parsley and extra Parmesan cheese if desired. Serve immediately and enjoy!
