Prep Time: 15 minutes
Cooking Time: 1 hour 20 minutes
Ingredients:
- 1 whole rabbit (about 2.5-3 lbs), cut into pieces
- Salt and pepper to taste
- 3 tablespoons olive oil or avocado oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 8 oz mushrooms (such as cremini or button), sliced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup dry white wine (optional, can substitute with more broth)
- 2 teaspoons dried thyme (or 1 tablespoon fresh thyme)
- 1 teaspoon dried rosemary
- 1 tablespoon Dijon mustard
- 1 tablespoon butter
- Fresh parsley for garnish
Instructions:
- Season and Sear the Rabbit:
Season the rabbit pieces with salt and pepper. In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the rabbit pieces in batches until golden brown on all sides, about 4-5 minutes per side. Remove the rabbit and set aside. - Sauté the Aromatics and Mushrooms:
In the same skillet, add the remaining tablespoon of oil. Add the chopped onion and cook for 3 minutes until softened. Add the minced garlic and sliced mushrooms, and sauté until the mushrooms are browned and have released their moisture. - Deglaze and Combine:
Deglaze the skillet with the white wine (or additional broth) and let it simmer for 2 minutes, scraping up any browned bits from the bottom. Stir in the chicken broth, Dijon mustard, thyme, and rosemary. Bring the mixture to a simmer. - Braise the Rabbit:
Return the rabbit pieces to the skillet, nestling them into the sauce. Cover with a lid and reduce the heat to low. Let it cook for about 1 hour, or until the rabbit is tender and easily comes off the bone. - Finish with Cream:
Remove the lid and stir in the heavy cream and butter. Let it simmer uncovered for an additional 5 minutes until the sauce thickens slightly. - Serve:
Garnish with freshly chopped parsley and serve the rabbit pieces with the creamy mushroom sauce.
