Ingredients:

For the Beef Filling:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (if needed)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper, to taste

For the Lettuce Wraps:

  • 8 large lettuce leaves (like Romaine or butter lettuce)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced avocado
  • 1/4 cup sour cream
  • 1/4 cup salsa (sugar-free)
  • Fresh cilantro for garnish
  • Lime wedges (optional, for serving)

Instructions:

  1. Prepare the Beef Filling:
Heat a large skillet over medium heat. Add the ground beef and chopped onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.
  2. Add Seasonings:
Add the minced garlic to the browned beef and cook for an additional minute until fragrant. Stir in the chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper. Cook for another 2 minutes, ensuring the beef is evenly coated with the spices. Adjust seasoning as needed.
  3. Assemble the Lettuce Wraps:
Lay out the lettuce leaves on a serving platter. Spoon a portion of the beef mixture into each lettuce leaf. Top with shredded cheddar cheese, diced tomatoes, and sliced avocado. Add a dollop of sour cream and a spoonful of salsa. Garnish with fresh cilantro and serve with lime wedges if desired.
