Ingredients:

  • 1 lb chicken tenders (or boneless, skinless chicken breast cut into strips)
  • 1 cup almond flour
  • 1/2 cup finely crushed almonds
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon water
  • 2 tablespoons olive oil (for frying)

Instructions:

  1. Prepare the Coating: In a shallow bowl, mix together the almond flour, crushed almonds, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  2. Set Up Breading Station: In a separate bowl, whisk together the eggs and water.
  3. Bread the Chicken Tenders: Dip each chicken tender into the egg mixture, then coat it in the almond flour mixture, pressing lightly to ensure the coating sticks well.
  4. Cook the Chicken Tenders: Heat olive oil in a large skillet over medium heat. Fry the chicken tenders in batches, cooking for 3-4 minutes per side until golden brown and cooked through. Alternatively, you can bake the tenders at 400°F (200°C) on a parchment-lined baking sheet for 15-20 minutes, flipping halfway through.
  5. Serve: Transfer the chicken tenders to a plate lined with paper towels to drain excess oil. Serve hot with your favorite keto dipping sauce.
